5 Ingredient Mini Paleo Chocolate Chip Cupcakes

 

Whether you are eating clean or just looking to shake it up a bit, these chocolate chip cupcakes from the brilliant mind of Rachel Mansfield are sure to satisfy your sweet tooth. Try this delicious paleo chocolate chip cupcake recipe using Handsome Brook Farm pasture raised organic eggs.

Total time: 25 mins

Yield: 12-14 cupcakes

 

Ingredients

2 + 1/4 cup almond flour

1/2 cup coconut sugar

2 Handsome Brook Farms Organic Pasture-raised Eggs, lightly whisked

1 teaspoon vanilla extract

1/3 cup almond milk

1/2 teaspoon baking soda

1/3 cup dark chocolate chips

 

Directions

  1. Preheat oven to 350 degrees and line a muffin tray with liners or grease well
  2. In a large bowl mix together ingredients except dark chocolate chips and mix until well combined (I used hand mixer)
  3. Fold in chocolate chips then add cupcake batter to muffin tray
  4. Bake in oven for about 20 minutes or until ready
